Title: Unleash the Power of Leftover Veggie Scraps and Dried Fruit: Transform Them into Dairy-Free Cheese at Home
Introduction:
Have you ever struggled to find a creative way to use leftover veggie scraps and dried fruits? Look no further than transforming them into dairy-free cheese at home! This process is not only trendy but also a cost-effective and sustainable option. In this article, we will explore the process of making dairy-free cheese from scratch using the knowledge gained in a community college culinary program in 2000.

  1. Gather Ingredients:
To begin, you will need the following ingredients:

    • 1 pound of fresh vegetables (such as peas, carrots, or sweet potatoes)
    • 2 cups of dried fruit (such as cranberries or apples)
    • 3 tablespoons of melted ghee or vegan butter
    • 1/2 cup cashews
    • 1 teaspoon of Himalayan pink salt**
    • 2 cups of water
**Himalayan pink salt can be found at specialty food stores or online.
  2. Prep the Veggies and Dried Fruit:
Wash the vegetables and peel off any unwanted skins or stems. Dry-roast the vegetables in a skillet for around 30 minutes until they are crispy and browned. Remove from the skillet and let them cool completely before blending into a smooth consistency. Dry-roast the dried fruit in a separate skillet over medium heat until golden brown. Remove from heat and let cool completely before blending into a smooth consistency.
  3. Salted Water:
To make a creamy base for your dairy-free cheese, prepare 2 cups of salted water**. Add salt to taste, mix well, and set aside.
  4. Blend Ingredients:
In a food processor or blender, combine all ingredients and blend until it forms a smooth puree. Adjust seasoning to taste at this stage, you may need to add more dried fruit or vegetables to reach your desired consistency. Some people prefer more cranberries, while others like more cashews or sweet potatoes.
  5. Melt Ghee:
Melt 1 tablespoon of ghee in a saucepan over medium heat until it sizzles and foams slightly. Remove from heat and let it cool before continuing with the recipe.
  6. Cook Dairy-Free Cheese:
Add your blended mixture to your prepared salted water mixture in small batches while whisking continuously until fully incorporated. Then add your ghee (not included in our required two cups) to the mixture and fold everything together using wooden spoons until coated evenly with melted ghee/butter mixture, which will then harden into cream cheese texture but still maintain its original creamy consistency . Allow it to cool down by placing it in the fridge overnight. After it has cooled down completely, remove from fridge, slice it into cubes or rectangles depending upon your preference; use parchment paper if needed for even cooking when grilling on a dessert tray OR cookie sheet . Store in freezer bags after cutting
  7. Reheat Delicious Dairy Free Cheese:
For rehydration , thaw out half of your cubes in water up to four hours before grilling/roasting . To reheat any additional slice intended for grilling/roasting (or for slicing , if not grilled/roasted), allow thawed cubes to defrost , cool slightly , add splashes of toasted sesame oil , and arrange thinly on dehydrator flo torefrigerate overnight so they are ready for grilling/roasting when ready .
    Alternative Method:

On days when you find hard creatures like pestle burger pattie makers! If you love grinding up fruit skins to make tapioca string then You can grind up dried fruit skins instead of fruit peel skins ! Other variations involve incorporating other herbs , I found that different cheeses can serve as great substitutes such as while vegan
